previously sandy beets, just rinsed & peeled. ready for cutting & baking w/ olive oil, garlic, pepper flakes & fresh thyme. we'll add these to salads throughout the week.

ta-dah! i sauteed beet stalks & greens in olive oil with garlic, anchovies, and red pepper flakes. once the stalks became somewhat soft, i added a large can of san marzano tomatoes, salt and then simmered for 20 minutes. meanwhile, i boiled gnocchi pasta (not potato dumplings, but actual
pasta!), and prepped shrimp for a quick pan fry. nick loved it, and chelsea (our dog) begged for a lil taste (too spicy for the girl).
